I made this tonight and I must say it was delicious!! Stuffed peppers are a recipe that always remind me of my mom because it was one of the ten recipes she rotated growing up! haha-sorry mom.

Here is the recipe:
-4 bell peppers
-1lb. lean ground beef
-1/2 c. onion
-garlic
-sprinkle of cumin & oregano
-1 large tomato
-salt & pepper
-splash of hot sauce
-1/2 ketchup
-tsp. Worcestershire
-2 cups of brown rice


First add onion & garlic over medium heat with a little EVOO. Preheat oven to 350 degrees. While onion & garlic and heating up cook rice(follow box directions). After onions have cooked for 5 mins add meat, tomato, s&p, oregano and cumin. Once meat mixture is complete, drain meat. Cut tops of peppers and coat with EVOO and pinches of salt. Then mix ketchup, Worcestershire and hot sauce together in a separate bowl. Combine meat mixture and rice, begin filling peppers and top with sauce. Cook for 40mins-in the last 5mins you can add cheese. VERY YUMMY, low fat and low carb!

We did it! At sunset in Puerto Rico on December 21, 2009 we finalized the deal! :) I had waited for this moment my whole life and it was well.. perfect! Having a destination wedding was just what we wanted and it fitted us perfectly. We were so grateful to have our closest family in attendance. Many people have asked " Hows married life?" and to be honest we are the same people we were before hand so its much like it was except with a deeper bond...I guess is the best way to put it. We still very much enjoy our free time with friends if not, having a quiet evening at home. We are both eager to see what the future holds for us...
